- ¾ cup granulated sugar (or coconut sugar)
- 3 cups warm water (between 105º – 110ºF / 40ºC-43ºC)
- 2¼ teaspoon active dry yeast (equivalent to 1 packet)
- ⅓ cup vegetable oil or melted butter
- 1 large egg, beaten
- 1 tablespoon fine sea salt
- 7-8 cups bread flour (if using Kamut flour or sprouted flour, reduce to 6½ to 7 cups)
Instructions
- Combine sugar and warm water in a large bowl (or your stand mixer bowl). Stir gently, then sprinkle yeast evenly on top. Let stand undisturbed for 10 minutes until the mixture becomes very foamy, indicating active yeast.
- If using a stand mixer, attach the dough hook. Add the oil (or melted butter), beaten egg, and salt to the yeast mixture. Mix briefly to combine. Slowly add the bread flour, one cup at a time, mixing well between each addition. After the 6th cup, observe the dough; it should look shaggy and start to come together. - Once the second rise is complete, turn the dough out onto a lightly floured surface. Divide the dough: for smaller pans (4″ x 8″ or 4″ x 9″), divide into 3 equal pieces. For larger pans (4.5″ x 12″), divide into 2 equal pieces. Roll each piece into a rectangle (approx. 5″ x 12″ for smaller, 6″ x 18″ for larger). Starting from a narrower end, tightly roll up the dough into a log. Pinch the seam closed along the bottom and pinch the ends to seal them. Place the shaped dough log into the prepared bread pans, seam side down.
- Cover the dough-filled pans with a dampened kitchen towel and let them rise for a final 30 minutes, or until the dough has risen just above the top edge of the pans. While the loaves are completing their final proof, preheat your oven to 350ºF (175ºC).
- Bake the bread for 30-45 minutes. Start checking for doneness after 30 minutes. The bread is fully baked when the crust is firm and golden brown, and the underside of the loaf sounds hollow when tapped. Immediately remove the baked loaves from their pans and transfer them to a wire cooling rack. Allow them to cool completely on the rack before slicing to ensure a perfect texture.
